Line an 8x8in baking dish with parchment paper to prevent the bars from sticking. Press the batter out into the pan. Cover the bars with another piece of parchment paper and refrigerate until completely set. Cut bars into four equal pieces and enjoy at your leisure.

Chocolate Avocado Strawberry Smoothie

Do not be fooled by the presence of avocado in this paleo snacks recipe. While the avocado does lend quite a bit to the texture of this smoothie, the flavor comes directly from the chocolate and strawberries. Just remember to choose chocolate that is at least 85% dark in order to ensure your recipe truly fits into the category of paleo snacks.

Next, add your chopped nuts and stir until well coated.

Roll the batter into approximately 1″ balls. Roll each ball in coconut flakes until completely covered. Place balls on a baking dish lined with parchment paper. Refrigerate for one hour or until balls are firm to the touch.

So you may want to consider making a double batch because once you taste them, they are sure to go quickly.

Begin by washing and drying your kale. You will need to ensure that it is completely dry before you start making your chips or instead of ending up with a crispy, salty chip, you will end up with a chip that is more chewy than crispy.

Preheat your oven to 300 degrees Fahrenheit.

Using a pair of kitchen shears, remove the center stems from your kale and chop up the leaves.

In a large mixing bowl, toss your kale leaves with olive oil and as much sea salt as you like. Spread the leaves out on a baking pan. If you are making a bunch of chips at once, be sure to use two or more baking pans as overcrowding your pans will result in less crispy chips.

Bake on center rack for approximately 15 minutes or until they reach your preferred level of crispiness. Allow chips to cool and then enjoy.

If making enough chips to last awhile, you will want to store them in a paper bag rather than in a plastic container or bag as plastic will cause your chips to sweat and become soggy rather quickly.

So when I found this recipe for no-rito snack chips, I knew I had to share it with you. While there are many paleo snacks out there to choose from, this one is by far my personal favorite.

Your Shopping List

1/4 cup grass-fed butter (you can also use ghee if you prefer)
1/4 cup coconut flour
3/4 cup almond flour
1 1/2 teaspoons chili powder
1/2 teaspoon paprika
1 large egg
1/2 teaspoon garlic powder
1/2 teaspoon sea salt
1/4 cup flax seed
1/2 teaspoon cumin powder

Begin by preheating your oven to 350 degrees Fahrenheit and lining a baking pan with parchment paper to prevent your no-rito chips from sticking.

In a large mixing bowl, melt your butter or ghee. Add the remaining ingredients to the melted butter and stir well.

Using your hands, kneed the mixture until all ingredients are fully combined. Shape the batter into a ball and place on top of a sheet of parchment paper. Top the batter with another sheet of parchment paper and use a rolling pin to spread out the batter into a large rectangle.

Using a sharp knife, cut the batter into triangles or any shape that you desire. Place the chips on prepared baking pan and bake for 10 minutes on center rack. Turn off heat and allow chips to remain in the oven for an additional 15 minutes to achieve maximum crunchiness.

Avocado Deviled Eggs

If you are a big avocado fan, you are absolutely going to love this twist on traditional deviled eggs. Best of all, these easy to make healthy paleo snacks are filling enough to get you through even the toughest afternoon slump.

6 large eggs, hard boiled
3 tablespoons paleo-friendly mayonnaise (you may want to highly consider making your own)
1 medium avocado, peeled and pitted
Sea salt and freshly ground black pepper to taste

Peel hard boiled eggs and slice each egg lengthwise. Using a spoon, scoop the yolk out of each egg and place in a medium mixing bowl.

Once all of the eggs have been sliced, combine yolks with your avocado and mash until fully combined. Add mayonnaise, sea salt, and black pepper to egg mixture and stir well.

Place approximately one spoonful of mixture into each egg half. Garnish eggs with a pinch of sea salt and freshly ground black pepper and serve.

If you plan on making these deviled eggs ahead of time, it is best to store egg halves and avocado mixture separately. Stuff eggs directly before serving for best results.

Zucchini Fritters

If you are looking for a hot paleo snack that is super simple to make, these zucchini fritters are the answer to your prayers. Best of all, you can easily make them ahead of time and just warm them up for a few seconds in your microwave to enjoy a fresh made taste.

2 large eggs
1/2 cup almond meal
2 large zucchini
2 teaspoons olive oil
1/2 tablespoon chopped mint
1 teaspoon cumin powder
Sea salt and freshly ground pepper to taste

Heat olive oil in a skillet over medium heat. Place patties in skillet and cook for approximately 3 minutes on each side.

To add even more flavor to these fritters, you can add some fried onion or bacon to the batter before frying.

When it comes to savory snack options, you simply cannot leave hummus off the list. Unfortunately, many traditional hummus recipes are not paleo friendly. Thankfully, this recipe is so there is no need to give up the hummus you love in order to stick to your paleo diet.

1 head of cauliflower, chopped
4 cloves minced garlic
2 tablespoons lemon juice
1/2 cup tahini
1/4 cup olive oil
2 teaspoons cumin powder
1 teaspoon paprika
1/2 teaspoon sea salt

Begin by preheating your oven to 500 degrees Fahrenheit and prepare a baking sheet by lining it with parchment paper.

In a large mixing bowl, toss chopped cauliflower with 2 tablespoons of olive oil, cumin powder, paprika, and sea salt.

Spread cauliflower out on prepared baking sheet and bake for half an hour.

After removing cauliflower from the oven, transfer to your food processor and add lemon juice, garlic, tahini, and 2 tablespoons of olive oil. Pulse until smooth.

Top with a splash of olive oil and a pinch of paprika. Serve with your favorite vegetables for the ultimately paleo snack.
